Instructions
- Dry cornbread through the center. Spread cornbread cubes in one layer across two pans. Bake at 300°F for 18 to 22 minutes, turning once. Break one cube open; its center should feel dry and firm while the exterior remains only lightly golden.
- Brown mushrooms without crowding. Heat oil in a wide skillet and cook mushrooms in two batches. Leave them undisturbed until their first sides deepen, then turn and continue until the pan looks nearly dry. Combine batches before adding butter, onion, and celery.
- Hydrate by visual cue. Whisk eggs into stock. Fold mushroom mixture and herbs through the dried cornbread, then add three quarters of the liquid. Add more only where cubes remain chalky; properly moistened pieces glisten and compress without dissolving.
