  • 1 teaspoon vanilla extract (5 g)
  • 2 tablespoons powdered sugar, optional (15 g)

Instructions

  1. Prepare. Heat oven to 350°F (175°C). Butter a shallow 2-quart ceramic baking dish. Toss berries with 67 g sugar and cornstarch in the dish, then spread them in one even layer.
  2. Combine. Whisk flour, baking powder, and salt. Separately whisk 100 g sugar, zest, egg, milk, cooled butter, lemon juice, and vanilla until smooth. Fold dry ingredients into wet only until combined.
  3. Layer. Pour batter slowly and evenly over the berries without stirring. Ease batter toward bare corners with a spatula while keeping the fruit underneath and the top level.
  4. Bake. Bake 35 to 40 minutes until the center springs back without rippling, the top is pale gold, and deeper color appears along the edge. Berry juice may remain visible around the perimeter.
  5. Serve. Set the dish on a rack for 10 minutes. Add powdered sugar if desired. Spoon into eight bowls, reaching through the golden cake and berry layer for every portion.
