Instructions
- Toast bread on both faces. Brush baguette slices lightly with olive oil and arrange in one layer. Bake at 400°F for 7 to 9 minutes, turning once, until both faces are crisp and the rims show irregular golden patches.
- Blend feta into soft swoops. Process feta, yogurt, lemon zest, juice, and black pepper. Scrape the bowl twice and continue until the mixture looks smooth enough to leave curved ridges behind a spoon, with no large white crumbs remaining.
- Crush peas, do not puree. Mash thawed peas with olive oil, salt, and chopped mint. Stop while roughly half remain whole and the rest form a coarse binder. The mixture should look glossy and mound on a spoon rather than release liquid.
- Assemble near serving time. Spread a generous teaspoon of feta on each cooled toast, leaving some golden rim exposed. Add a smaller spoonful of peas and press lightly so it adheres. Alternate radish slices and mint tips across.
- Arrange in loose rows. Move the crostini to a white oval platter in overlapping rows. Turn some pieces slightly so the green topping catches the light. Finish with lemon zest and black pepper, then serve within an hour.
