Instructions

  1. Cook a glossy cranberry layer. Simmer cranberries, sugar, orange juice, and zest for 8 to 10 minutes. Stop when most berries have burst and the sauce leaves a broad trail behind the spoon, with several whole berries still visible. Cool completely.
  2. Bake a tender chocolate sheet. Whisk flour, cocoa, sugar, baking soda, and salt. Add buttermilk, oil, eggs, vanilla, and hot coffee, stirring until smooth. Bake in a 9-by-13-inch pan at 350°F for 22 to 25 minutes, until the center.
  3. Whip cream to spreadable peaks. Beat cold mascarpone briefly until smooth. Add cream, confectioners’ sugar, and vanilla, then whip to soft-medium peaks. A lifted whisk should leave a curved tip that holds its outline while the cream remains easy to spread.
  4. Build visible, distinct bands. Place one third of the cake cubes in a clear bowl. Spoon cranberry sauce near the glass, then spread cream outward to the edge. Repeat twice, turning dark cake sides outward and avoiding pressure.
  5. Chill and finish the crown. Refrigerate the assembled trifle for at least 2 hours so the cake softens slightly and the layers settle. Before serving, add reserved cranberries, a loose handful of cake crumbs, and optional chocolate curls, keeping.
