  • 3 large eggs, room temperature (150 g)
  • 1 tablespoon vanilla extract (15 g)
  • 1 tablespoon lemon juice plus zest (20 g)

Instructions

  1. Cook two bright berry sauces. Simmer strawberries with half the cornstarch and blueberries with the remainder in separate small pans for 6 to 8 minutes. Mash only some fruit. Each sauce is ready when glossy trails remain briefly behind.
  2. Press a level crumb base. Combine graham crumbs, melted butter, and salt. Press firmly into a parchment-lined 9-inch square pan, paying special attention to the corners. Bake for 9 minutes until fragrant and slightly deeper gold, then let it.
  3. Mix without whipping. Beat cream cheese and sugar on low until smooth. Blend in sour cream, vanilla, lemon zest, and juice. Add eggs one at a time just until no yellow streaks remain.
  4. Swirl with restraint. Spread filling over the crust. Spoon alternating small pools of the cooled sauces across the surface. Draw a thin skewer through the pools in long S-curves only four or five times, leaving clear red.
  5. Bake and chill for clean squares. Bake at 325°F for 34 to 36 minutes. Remove when the perimeter looks matte and the center moves as one soft patch. Cool for 30 minutes, then refrigerate at least 3 hours before lifting.
